Is there away to have the a user receive a email read receipts once an email is sent from app sheet?

That’s not possible right at the moment. AppSheet is using MandrillApp for email workflows, so it might be possible to get that info with the API. I encourage you to submit that as a Feature Request

@Adam_Grunys I haven’t tried it yet, but you may be able to use trackable pixels embedded in your workflow emails to track email opens in Google Analytics:
