To my knowledge, there is no way to change the appearance of the map pins.

If you put a formatting rule on the LatLong (or XY coordinate) column - that affects the individual pin on the map.

For example: on this map I have grey pins and a red pin

Seems I needed to deleted AppSheet auto generated [_ComputedAddress] column for my format rules to take.
