Why do I get the ID with the exclamation rather than the Name in the drop down?

Your referenced table name is Email. Should it be Users?

Thanks @Suvrutt_Gurjar . I changed the name of the Table from Email to Users, as it seemed to make more sense for what I was doing and forgot to change that Ref. Thank you for your sharp eye!
