User result of USEREMAIL() not authorized

Is it possible that an unauthorized user is inserting records?
I use the USEREMAIL() function to find out which user is inserting the information but it turns out that the email saved in the spreadsheet does not correspond to any authorized user. How is this possible?

Is it someone that you know at all, or added in the past but no longer is supposed to access the app. how are you allowing users access?

Checking the “Require Sign-in” configuration I see that I have “Allow all signed-in users” enabled so it may be for this reason.

Yes that’s the reason. Remove that option and you should be fine.
