Wich field change in a record

Hello there

I want to send an email to the user with the changes made to a record.

I just want to send something like this:

Dear user xxx

I notify you that the xxxxx record in the field was modified:

Field Changed .-     YYYYYYYYY  (Field's name)

Content before change ---------- Content after change
---------------------------------------------------------------------------------------------------
AAAAAAAAA. ---------------------------------BBBBBBBBBBBB
_____________________________________________________________
The thing is, since there are a lot of fields in the record, I don't want to send them all.

Can any of you give some insight on how to do this, in other words what do I need to do to only send the change suffered in in a field in a record?
