You could do something similar with deletes pretty easily (creating a flag inside an invisible column, hiding those records that are flagged, but still allowing people to view them somehow, and a scheduled report to delete everything flagged during the night).

Undoing the last change would require significant build requirements to get to work (would essentially require creating a way to temporarily save a previous state of a record, and delete it later when not needed or whatever, as well as a way to revert back).

Possible to build now, yes; but having a baked-in Undo system would rock!
