In the picture shown by you and for the fileds marked, there are app formulas. The fields with app formulas are computed by formulas in those fields and hence are not editable.
If you wish those “initially” computed values can be overridden by the user when a data entry form is first opened for a new record, you may use the formula in initial value of the column settings.
