How come the UI does not show all fields when switching to a larger screen?

Because AppSheet is reserving enough room to display the entirety of the longest second-column content.

Sometimes doing a Regenerate on the table will help AppSheet recompute the column width, but it could just as easily compute a larger width.

In the table view configuration, you could change Column width to Narrow from Wide or Default.

You could try reordering the columns so the one with the longest content is last in the row.

There’s no way to force a column width.

Please Save & Verify the app so it would read values from the spreadsheet. This way the app knows how to adjust the column width.
