I have created an app for my data having 100+ columns. Many of the columns are automatically classified as Required column by Appsheet. All the date columns are filled with Current date value. Should I have to go to each column and change is manually or is there any easier way to do it. Example, edit the script generated, or extend the UI to show Required column etc.

If I understood you correctly, you can change the column definition Initial_Value, remove any automatic formula from there.
Similar to the required column, you can toggle on-off here:
