I would like to use workflow to make an API call. The API provider
requires that we provide them with FQDN or IP address for where the
calls will be originating. Is there a way to achieve this with Appsheet.
What FQDN should I provide them?

webhook. The API provider is asking for the IP address or FQDN of the
originating call so as to provide us with an endpoint
