I would reccommend doing them at night, so you don’t interupt users with errors. I have done this before, and users get frustrated. If you are doing big updates that take multiple days, then copy the app, and edit the copy, and then update the app from the original app. I’m sure there is documentation on this. That might be a pro feature, not sure.
