Can you integrate a Microsoft Outlook calendar as a data source like you can with Google Calendar?

I’m afraid you are not able to do that directly as you can do that with Google.

If you have premium power automate flows you can also send a webhook from Appsheet to Power Automate and use the Power Automate Create an Outlook Event action and the others.
