Fetching Contact Details from a User's Profile in Workspace / G Suite into AppSheet

I'd like to import the contact details from a users Workspace account (phone, email etc.) and sync it with my data table for profiles in the app (table "People") who perform tasks and are referenced in other tables.

As far as I know, there is no capability yet to easily perform this function.  Note that Googles adoption of Appsheet into their ecosystem is only a couple years old.  There was a lot of work done to transition AppSheet's assets to Google infrastructure.  I have to believe that soon we will start to see more integration with the other Google Workspace tools - but it will take some time.

Unfortunately, for now you will need to find some alternative way to automate the syncing of the contact information if manual entry is not an option.

Google Scripts would be one option.  

AppSheet does have the ability to use a Google Folder as a datasource and will pull in details about the files located in the targeted folder.  I am not sure how this feature will react to exported contact information.  You could try it out and see.  It is extremely easy to setup.   To add the table, click the "New Table" button and select the "Documents on Google Drive".  See image below.

There’s not a direct integration with Workspace User Directory today, but there are options for using the Admin SDK Directory Service and Apps Script to automatically pull your user directory into a Google Sheet, which you can then connect to one or multiple apps.
