Managing Data Within Shared Tables For Max Performance

Is it better to use a unique worksheet per table instead of using one worksheet with on sheet per table?

In my opinion, as a "rule of thumb", it is generally better to use a single File that contains all sheets/tables for the app.  It's easier to manage the tables.  I have not seen ANY noticeable performance improvement with apps that use a file per table.  And I have worked in several apps configured this way. 

However, there are exceptions to the "rule of thumb".  For example, in a system of apps that share SOME data, I might separate the common data tables into one file while using app specific Files for the rest.

There are, of course, things that can be done to help improve app performance but are highly dependent on the app's needs AND may change over time as the app changes and grows.
