I’m assuming you have left the “Email Body” field blank in your workflow/report, and thus are seeing the default body text.
You can customize the email or attachment to a very large degree actually. But if all you want is the simply column and value listing, but with some names changed, then click on the “create” button next to the “Email Body Template” field, as shown in screenshot below. This will re-create that default message in a Google Doc that you can then edit to your heart’s content (following the rules of course).
