Does anyone know, if we were to somehow accidentally lose or delete our app sheet app. Would I still have access to all the data and all entries made from the app on the google sheet that was used to create it or does that google sheet get deleted as well?

As far as I know, the underlying spreadsheets remain unaffected even if you deleted the associated AppSheet apps.

You can easily test this by creating an App from SpreadSheets and deleting the App to see what happens to the SS's

Yeap, that's true. If you accidentally delete the app, you need to send a support ticket to restore your app.
