I am currently using one Google sheet file per user approach, and wondering is there any way to use different GS files depending on user logged in, otherwise I have to create one app per user, I guess ?

Using Data Partitioning you could

make a table in you app to dynamically connect to a different spreadsheet file based on the partition expression which in your case could be USEREMAIL(). It requires Business subscription plan.
